On an environmental level meat, egg, and dairy production is quite harmful to the environment more so than what seems to be common knowledge. When I think of green house gasses I think of driving less or burning less coal etc.. Also a good documentary is Forks over Knives which is on Netflix streaming.
So, I am starting Vegan Vednesdays! My buddy Barefoot Josh was the brilliance behind the alliteration. I had posted on facebook that there should be a vegan day of the week and I could hear it being said with a thick German accent in my mind as I read his suggestion of Vegan Vednesday. So I am commandeering the phrase and rolling with it.
It has a moral side but also I think the challenge of trying new foods and finding new recipes is good for me too. I get stuck in a rut and eat the same things all the time.
Yesterday I practiced coming up with something for today. I made Lentil Burgers. Four of the four boys tried them, which is huge for picky Milo to try something new. So proud of him for trying something new! Three of the four liked them and asked for seconds. I made them again today and cooked them in the cast iron skillet and baked some. I leaned much and both batches are edible. Score!!!
For breakfast I had sweet potatoes with sunbutter and a bit of brown sugar. It's like eating pie only better.
I typically have a salad every day with sprouted lentils, kale, spinach, romaine (we buy bulk greens at Sams club) roasted chick peas (today's has hummus), red peppers, nutritional yeast, flax seeds, a tablespoon of olive oil, and some kind of dressing. I like to make my own curry dressing but also its really tasty with a deli mustard or honey mustard.

This is exciting! Great timing too! I watched Forks over Knives a week ago or so ago and have been cutting meat and dairy out of my diet since. Not as hard as I thought it would be plus... It's a great way to live. I feel great! Can't wait to read your recipes.
Vegan Vednesday..I love it! Do you sprout your own lentils? I've never sprouted seeds or grains but want to learn to do it. My next project! Your salad looks yummy and I'm going to try the sweet potato/sunbutter/brown sugar breakfast. Great post!
So many good vegan recipes these days, some my family can't even tell they don't have animal products! Hooray for Vegan Vednesdays!
Good for you!! I wish you the best of luck with it. Forks over knives was eye opening. I knew a great deal of the concepts but hearing about the actual studies and the China Study was cool!
I do sprout my own lentils and it's super easy. Let them soak overnight and then drain the water off. I use a seed starting lid that is just a plastic lid with a screen to let air and water in or out and keep the seeds from washing away when you drain the water off. I like to set my jar on its side with the seeds or lentils along the bottom lengthwise. Then let tem sit. Mine are on my kitchen counter. Rinse well everyday. It only takes a couple days to sprout and just depends on how long you want to wait to eat them.
I am still in shock and excited that my super picky eater ate a burger. Ketchup and mustard helped him be brave :)
